Aligoté is a white grape variety mostly found in the Burgundy region of France where it makes Burgundy's "other" white wine. It is mainly found growing in the less-rated sites, away from the more expensive land reserved for Pinot Noir and Chardonnay. It is best known in the region of Bouzeron where the AOC Bouzeron must be 100% Aligoté. It is also grown in Eastern Europe where they are quite successful. The wines are minerally with good acidity with herbal and light citrus notes. Pair with fish dishes, soups and salads.
